Ingredients
· ¼ cup sugar
· ½ tsp baking soda
· ¼ tsp salt
· ½ cup cold, unsalted butter, cut into small pieces
· ¾ cup buttermilk
· 1 tsp pure vanilla extra
· Frozen blueberries to taste
· Icing sugar (optional)
Directions
1. Preheat oven to 375F and place rack in middle of oven.
2. In a large bowl, whisk together flour, sugar, baking soda and salt. Add butter using a pastry blender to pressing with a fork until it forms a coarse, crumbly texture. Add buttermilk and vanilla; stir until dough forms. Do not overmix.
3. Portion dough into 6 to 8 equal parts. Add blueberries while forming a thick disc with each portion. Do not overhandle once blueberries have been added.4. Place on baking sheet with parchment paper and bake for 20-25 minutes or until golden and a toothpick inserted comes out clean. Remove from sheet and transfer to wire rack to cool.
5. Dust with icing sugar once cooled.
